From the restaurant's website:
"From its location on the 40th floor of the Chicago Stock Exchange, Everest offers breathtaking views of Chicago on par with the exquisite wine and cuisine offered by Chef Joho. … The menu at Everest changes frequently to reflect the changing seasons and available ingredients. Guests may order Chef Joho's acclaimed seven-course degustation menu or the seven-course vegetarian degustation menu. They may also select choices from the three- and four-course pre-fixed menus, as well as choosing the three-course pre-theater menu, prepared exclusively by the chef, available only at 5:30 pm (and 5 pm on Saturday)."

Zagat 2010: 27 food rating (extraordinary to perfection)
"One of a few four-star restaurants in the Chicago are, this room with a view (it's on the 40th floor) is spectacular in every way. The French/Alasatian cuisine of chef Jean Joho is beyond reproach. Service is excellent; the room is pleasing. Top drawer."

"For a restaurant that combines it all—sumptuous surroundings, careful lighting, supremely attentive service and food that is as awe-inspiring as its spectacular views—I'd nominate four-star Everest as Chicago's most romantic restaurant."
