The Covey Restaurant & Brewery has made quite a splash since its 2006 opening near Texas Christian University thanks to its delicious house-brewed beers and far-from- -average bar food. Brewmaster Jamie Fulton, a native of nearby Cedar Hill, trained at Le Cordon Bleu in London, Blue Star Brewing Company in San Antonio and the World Brewing Academy in Chicago and Munich. The training has paid off with her number of stellar brews, including a lager, wheat beer, amber and pale ales, and a porter. Food highlights include starters such as hot spinach and artichoke dip, pecan-crusted shrimp, and Texas game lettuce wraps. Both the avocado Caesar salad and the Gorgonzola pear salad are recommended, as well as the "Not-So French" Onion Soup. Winning entrées include wood oven-planked salmon, Low Country quail, eggplant Napoleon, herb-roasted Cornish game hen and herb-encrusted rack of lamb. Ground sirloin burgers, rib eyes, blackened tilapia sandwiches and wood-fired pizzas round out the menu. Full bar. Serving lunch and dinner daily. Late-night Fri–Sat.
